The name came to us when noting the number of pubs in England that are named "The This and the That," such as The Unicorn and the Maiden or The Farmer and Dragon. A name for our brewery and pub that reflects our passions, our joys seemed natural. The greyhound, whose grace, elegance, and affection has enriched our lives, and the yeast, who digests starches and sugars and gives us beer.

At Le Lévrier et La Levure we will search for selection of local and regional ingredients wherever possible. By focusing on sourcing ingredients from the surrounding area, this brewery aims to offer a truly unique and authentic taste of the region.
